Fast And Tasty Frittata

Fast Frittata… yum tasty!
Have you noticed your taste buds are looking for a little zing, or that you’re prefering to eat lighter? These are signs that your body is gradually transitioning from winter to spring and desires less of the heavier winter fare and more of the lighter spring foods.  Here is a tasty and gently cleansing meal to try this week.

FAST FRITTATA – serves 2

Ingredients
4 fresh eggs 
1/4 red onion finely chopped
1 Cup shredded spinach
2 large potatoes or kumara (sweet potato) baked then cubed
4 Cups steamed green vegetables of your choice
Cooking oil

Method
1. Preheat your grill.
2. Heat a small pan over a medium heat. Spray or wipe the pan with a little cooking oil. Add the onions and saute for a few minutes until soft. Add the spinach and stir-fry until wilted.
3. Crack the eggs into a cup or bowl and beat with a fork or whisk.
4. Add to the pan with the spinach and onions, then drop the potatoes on top.
5. Remove the pan from the element and slide under the grill - the frittata will continue to cook on the bottom and also be cooked on the top. When the eggs have set, remove from the grill, slide onto a plate and cut in half.
6. Serve the steamed green vegetables on the side and enjoy!

Foods To Favour This Spring
Choose foods that are free of pesticides or preservatives and favour organic where you can. Fresh is always best and avoid reheated foods and canned foods.

Breakfast: Eat 8 cooked prunes along with a stewed apple or pear cooked with 1-2 cloves.

Vegetables: Eat lots of cooked leafy greens. Chop the greens and cook them with Kapha Churna Organic for best results.

Grains: Light yet nutritious whole grains such as quinoa, barley, amaranth and small helpings of rice are recommended. Kanji, made by boiling rice with lots of water is an excellent hot beverage and helpful for flushing toxins out of the body through the urine.

Spices: Ginger, turmeric, coriander, fennel and fenugreek help open up the channels of the body and support the flushing of toxins via the skin, urinary tract, colon and liver. Add spices to soups and dhals as they cook.

Avoid processed foods or foods with added salt, sugar or refined flours.

KAPHA cleanse and detox >>
Choose this cleanse if you are a Kapha type or suffering from Kapha imbalances such as weight gain, mucous congestion, with low energy and finding it difficult to motivate yourself and a tendency to feel sad or low in mood.
